This recipe has served me well for years. Whenever we have overnight company, everyone insists these are the best pancakes they've ever eaten. For those afraid of sour milk, it is simply a substitute for buttermilk. I use soured milk in every recipe that I have that calls for buttermilk and it works like a charm. It does NOT make things taste sour! Another note: the pancakes will start to "foam up" after you stir them. Resist the urge to stir them again. All those bubbles is what makes them so fluffy. The batter will be very thick and difficult to pour at this point. Also, as others have said, this does not serve 8. In my house, it serves 4 of us. Enjoy.

Classic recipe for really "Fluffy" pancakes! I always have buttermilk handy so I used that instead of doing sour milk as I find the real stuff does make a difference. But, if you don't have it on hand the milk/vinegar method is good in a pinch. I added a tsp. of vanilla for good measure, added the wet ingredients to the dry ones and didn't overmix these. Having a few lumps in the batter is a good thing! I let it rest for a few minutes while the frying pan heated up and WOW - they really puffed up nicely! These were perfect topped with butter and REAL maple syrup.

I always use lemon juice instead of vinegar for my soured milk. That being said, I feel like the proportions were a little odd in this recipe. Not sure what it was, but the flavor seemed a little unbalanced and "after-tastey". I usually do 1 TBS vinegar/lemon juice to 1 C milk for sour milk, (this recipe calls for 2 TBS acid to 3/4 C milk) so maybe there was too much acid. I had high hopes for this recipe, but it wasn't our favorite, sorry.

This turned out great!! I wanted to add some whole grains to the mix, so I combined 1/2 Cup all-purpose flour with 1/4 Cup each of Oat flour and Kamut flour. I didn't have any white vinegar, so I substituted that with Orange Champagne Vinegar, and used Canola Oil instead of Butter, used Evaporated Cane Juice instead of white sugar and added some Vanilla to the mix. Even with all these changes, they still turned out fluffy and of course delicious!!!

Amazing. I knew these were going to be fluffy, when the batter was very spongy and bubbled. As I was cooking one pancake at a time I noticed the batter got better and better as it rested, so i'd recommend letting it sit for a few minutes after getting it ready. I didn't have white vinegar so I used white wine vinegar, and I used olive oil instead of butter. Results were amazing.

My 12 yr. old was craving pancakes and I had none of the boxed mixes, so I found this and told him to go for it. We loved how fluffy they get! He added a little vanilla and they were divine.

Really liked these pancakes...they are like the super tall fluffy ones at a famous diner. These measurements are more like 2-3 servings, though. Thank you for the recipe!

This is a 5 star pancake but the vinegar in this recipe is too much and can be tasted, 1 cup milk to 1 Tablespoon vinegar to make sour milk. However I also made them substituting the milk/vinegar with Buttermilk and WOW, they came out great and full of good flavor. Optional, 5ml vanilla adds a little more flavor but still great without. As others have mentioned it is important NOT to over mix, when mixing the dry with the wet ingredients stir only 3 or 4 times max, its ok if its not all mixed in, the flour balls will vanish when cooking, over mixing will make them go flat. Make sure your skillet does not get too hot when making a larger batch or they will start to go flat loosing their fluffiness.

This is a very simple recipe for making quick and easy pancakes. I've tried other recipes before and this one is by far the best.

This recipe is aptly named, as "Fluffy Pancakes" is exactly what you get. I usually use 1 cup of milk vs 3/4 cup as this batter will thicken. Let it sit for 1/2 hour before adding to the griddle as the longer it sits, the more it bubbles, which makes a better, airy, fluffy pancake. HELPFUL HINT: Resist the urge to stir the batter as it rests or you will lose the "fluffiness"! Enjoy!

These were not fluffy at all. They were very dense. I followed the directions to a T. The batter was more like dough, but thought maybe that's the way it was supposed to be. Then I added more milk to make the batter more like batter. Nope that didn't work either. I will not make these again.

Thank you so MUCH for this recipe. I followed it to the letter and the out come was great! I had guests over the week end who wanted pancakes. I myself never eat them. Not a big fan of pancakes, until now. I did a small tester to see if stove was hot enough, if fluffed right up and tasted great. Later when making some the stove got hotter and the cakes were flat and tasted funny. It probably explains some of the bad reviews I saw when reading this. Griddle temp is important for them to fluff and be golden. Just did my 3 batch today. Mixture was a little thicker than the last so I added a little milk. Many things can affect that. Humidity, the size of egg, the density of flour in cup, the pros always weigh it on a scale, I just adjust and enjoy, hope you find this helpful. I know taste is a opinion not a fact, but I bet these are better than your local restaurant.

I thought I already had the best ever pancake recipe...but I was wrong! This recipe is even better! The only change I make is using apple cider vinegar in place of the white, it gives them a great flavor! Thank you so much for sharing this recipe!

I'm rating this as 5 stars because it's worth that. However, my variations made it less than that but it's my own fault! I used whole wheat flour (all I had on hand) which I know made them a little more hearty.. not the "fluffy" I was hoping for so next time plain ol' flour it is. I also think that the review that said add a tsp of Vanilla was right. These weren't sweet enough for my tastes. I'm also thinking of switching out the white sugar for brown sugar. I think with these changes these will be out of this world. But as a starter recipe this is dead on the money. These were HUGE pancakes (see my pic.. these things were a half inch tall!!). I let the batter sit on the counter about 5 min before pouring. I was hesitant because the batter was incredibly think but happy I did. Will most certainly be making these again and again and again!

Simply Awesome! This is probably my all time favorite recipe on this site. They are really melt in your mouth good and very simple to prepare with ingredients most people already have. YUM!!!

Love this pancake. I did not have white vinegar so I just squeezed 1 small lemon and added milk to make it 1 cup. Also added 1 teaspoon of vanilla. I think next time I will reduced the salt to 1/4 tsp., my preference. Very fluffy and yummy.

I read the 1 and 2 star reviews for this recipe, and I have to wonder, what did these people do wrong when they made these? This is a great recipe and makes delicious pancakes every time. I've probably made these 40-50 times without issue. The only thing I will say is I usually add 1/2 tsp of vanilla, but no other changes to the base recipe. This is also good if you want to add berries, pumpkin, ect. as well.

the first two I made came out doughy, and the vinegar taste was very noticeable. I had to add about a 1/4 cup milk to make them thick and fluffy without being doughy, but the vinegar taste remained, even after adding about a 1/2 teaspoon vanilla and a sprinkle of cinnamon.

Fantastic. Made them multiple times-forgot to leave a review. Only thing I add is teaspoon vanilla to a double batch. We freeze the extras to reheat for a quick breakfast during the week. My kids now beg for "fluffy pancakes, fluffy pancakes". Thanks for a great recipe!

These are awful. As of today, 54 cooks have rated this as 1 star, inedible! People who are rating this 5 stars have made a different recipe...they state that they have made it with real buttermilk or a 1 Tbsp. vinegar recipe, a DIFFERENT recipe. If you didn't make THIS recipe, please don't mislead me, who will never find the buried review of how you changed it to make it "your" 5 star!

These pancakes are magnificent! They are soo fluffy, light, and delicious. The only change I made was using Canola oil instead of butter. AmAzInG! This recipe is a must try. Thanks for the recipe kris!

No offense but these pancakes were not to my liking. I followed the directions EXACTLY and I could taste A LOT of vinegar. I recommend only 1 tbsp. vinegar. If you do the 1 tbsp. it would be very good.

I'll tell you what! I haven't had pancakes in years, but I was watching something on the food network and they were showing pancakes. I got an instant craving! I found this recipe and whipped it up quick. Very easy. I followed the recipe EXACTLY. The truth is; I have NEVER had better pancakes at home, IHOP, or any restaurant that were aas good as these. Very fluffy and slightly sweet. These are FANTASTIC. Do not alter the recipe...

There are lots of really yummy pancake recipes on this site, but this one is my fav. The thick batter allows for a pancake tall enough to make room for lots of blueberries that stay plump and juicy, just waiting to be bitten into.

This was really not the recipe that I was looking for. They didn't turn out, they tasted all right, but they were not fluffy, and they were mushy, and still wet inside. I reviewed the recipe serveral times and I followed the steps correctly. I hope to find a better working pancake recipe soon.

I think the proportions of milk to vinegar are off. I have always used 1 tablespoon of vinegar or lemon juice to 1 cup of milk as a buttermilk substitution. This recipe calls for 2 tablespoons of vinegar for 3/4 cup of milk.. I think this is why the end result was a SOUR aftertaste. My husband kept asking me if I had used bad milk. Usually, when done the correct way, you should not taste the vinegar or sourness in the recipe. :-(

Excellent! I usually keep a dry mix I make in bulk on hand, but I was out. These were VERY good! I doubled the recipe, which gave us 12 6" pancakes, and I added a tsp of vanilla. I don't think I'll be making that dry mix again!

Looks can be deceiving! The pancakes looked fine, just the same as when I use the store-bought pancake mix. The only explanation that I can see anyone giving this recipe 5 stars is if they just cooked the pancake, saw it looked good, and than their young children ate them without ever personally trying the pancake themselves. I did not try to change this recipe in any way, I followed it exactly as it was written. Just because your family may eat it and tell you that it is fine, doesn't mean that it is fine. It's just the same as asking someone "Do I look fat in this" the person will always respond with the answer you want and not what they really think. I truly believe that anyone that gave this recipe more than a one star rating (because that's the minimum) never ate the pancake that they cooked. Men and children will eat almost anything especially if you can drown it with syrup.

Whoa! This was my third time making pancakes. I first tried the chunky monkey pancake recipe, and i thought those were pretty good. And then i came across this one, and i saw all the positive reviews and decided to try. I cannot find words to describe their taste. The texture was fine, it's just that they weren't EDIBLE! The vinegar taste was too poignant, the baking soda and baking taste could also be felt, although it was more subtle than the vinegar.

I tried this with high expectaions. But after making them they really aren't that great! They are average at best! If i wanted average i'd just get the instant mix you just add water to. I followed the directions to the T and was very disappointed! I would not recommend at all!!!

Wow! With so many glowing reviews I thought this couldn't miss. I have two recipes I usually make. One from IHOP and the other from Alton Brown and both are very good. The batter for this recipe is like biscit dough not pancake batter.

I love this recipe when I first made this recipe I did it exactly as stated WONDERFUL!!! Made it again with pumpkin puree and then again the chocolate baking powder added OMG so delish best pancake recipe ever. I double the recipe each time I make it and freeze the pancakes for later useage. Great recipe thanks for sharing

Absolutely excellent-- I will never go back to boxed mix again (except to get rid of whats in the closet LOL) I used these on my waffle iron and they came out phenominal. (I was a little worried since it was a pancake recipe) I mixed about a 1 and a half tea of vanilla with the egg and butter and put 1 tea of cinnamon in the flour and YUMMY! FYI it only made 2 and a half waffles -- but thats a perfect breakfast for 2!

Not sure what happened because I followed the directions to a T but these were WAY TOO vinegary and seemed a bit too moist. They were fluffy but I was extremely disappointed. The dough resembled a very runny pizza dough, very jiggly. ???

I have made pancakes for more than a decade and these were a flop! From the moment I read 3/4 of milk and 1 cup of flour, I knew this was not going to hold. The batch was practically liquid. I do know why some reviewers would rate great, delicious, etc. I ended adding at least 1/2 cup more of flour and bananas to give it consistency.

Perfection! I spooned the batter into a piping bag (you can use a sandwich bag and cut off the tip) and it made is super-easy to pipe onto the pan. That way, you don't have to add milk to make the mixture less thick, and it fluffs up perfectly on the pan!

Sorry,these weren't good. Only thing differently that I did was add chocolate chips,which I always do because that's how my husband likes them. I've made A LOT of pancakes from scratch,growing up as the second oldest of 7 kids we had pancakes a lot so I don't think it was my technique that made these so bad. These are the worst I've ever made!They weren't fluffy at all and the flavor is ok......I always go for the highest rated recipe on this site which is what this was and I don't know if I'm going to do that anymore.......disappointed!

I think these are good pancakes, but I am rating on "Fluffy" pancakes. I didn't think these were fluffy at all. Perhaps, it's because I am at a mildly, high-altitude. I will try to reduce the baking powder / soda next time as the batter was fluffy, but the pancakes were not. As always, I added cinnamon and pumpkin pie seasoning, and my kids went crazy for tasty, but flat pancakes.

They looked great, fluffy and everything. After my husband's first bite though, he said it tasted like glue. Sure enough, I had to agree the texture was gummy. If I had used the 3/4 cups of milk the recipe called for, I would have had to spoon the batter, it was as thick as muffin batter, so I had to add another 1/2 cup. I have no idea what went wrong.

These got an enthusiastic thumbs-up at our house. I used apple cider vinegar instead of white and the taste was wonderful, very buttermilky. Thick, luscious pancakes. Next time I make them, I'll double the recipe, since-- at least in our house-- these quantities yield just enough for two servings (we like a stack).

My youngest says 100 stars! These were easy to make and wonderful to eat! I doubled the recipe and then halved the butter because it was all I had. We will certainly be making these again!

Wonderful!! I happened to have buttermilk on hand, so used that instead of soured milk. Will definitely be making these again! No need to buy the box mix when these are better, cheaper and healthier!

This recipe is excellent and I can't believe how fluffy the pancakes came out! However, while eating them I realized one little thing was missing - a little vanilla extract. This recipe is definitely a keeper and next time I make them, I will add some vanilla extract.

When I 1st read the recipe I was skeptical about adding white vinegar to the milk but I did & quickly realized that's the secret ingredient that makes them so fluffy & thick. I did add some cinnamon, nutmeg & banana to the batter so that made them delish!! :)

We have pancakes once a week lately, and I have always used Bisquick. These are so much better! I will save the Bisquick for other uses now. Great pancake!

Loved these pancakes! My husband and son did as well, and that says a lot! I added blueberries and vanilla to the mix and topped with a handful of berries. Will definitely make these again......very impressive for guests! Thank you so much for sharing this recipe!

I was afraid of the "sour" milk part, but I just went with it. I like my pancakes a little sweeter, so I added a tad bit more sugar. These came out SO SO SO good! I was so pleasantly surprised the first time I made them, because anytime I've tried to make pancakes, I've been discouraged because they come out terrible! These, were not though. They were as good as most breakfast places! I will be trying various things mixed in, in the future- chocolate chips, blueberries, bananas.

Excellent! From all the pancake recipes in this website I keep coming back to this one. I've done it with 100% whole wheat flour with great fluffy results as well. Just a tip - I add canola oil to the batter instead of the butter because I find the taste doesn't change as much but I do use butter on the grill to cook the pancakes. Also, I add 1-2 tsp of vanilla and sometimes cinnamon. Thank you for such a great recipe.

Serves 2 !! (or maybe we just eat so much lol) Used margarine and herb-vinegar (sunday morning, craving pancakes....no white vinegar to be found) and it still rocked my day. Fluffy, slightly sweet, crispy edges (used a small knob of margarine for every baking batch).... I'm throwing out my other pancake recipes. Kris - I could kiss you for sharing.

First of all I'm going to say that im no professional chef, but I have been cooking for my family for 25 years. And I have made pancakes from scratch thousands of times. I used this recipe because of all the positive reviews. I wasn't sure to use 3/4 cup of milk to 1 cup of flour. And all that vinegar in the milk? But I went ahead and did it. The "batter" looked more like watery, lumpy dough. It was so dense i could not pour it in the skillet. I had to spoon it. Then it sat on the skillet like a ball, so only a nickel sized circle browned at the bottom. I went back to the directions to see if i was suppose to flatten it. Nope. When i flipped it over it just looked wrong. I could not flatten it with my spatula without getting the uncooked "batter" on it. After having to flip it twice it did not look appetizing. I gave it a try anyway before serving it of course. It tasted even worse than it looked. All that vinegar is all you can taste. Im sorry for the bad review as I know its hard to measure and write down a recipe.

This recipe really does yield soft fluffy pancakes(even when they're cold). My daughter loves it everytime I make them. I added a bit of vanilla essence to give it more flavor. Will be using this recipe and this recipe only!

If you think you've already found the best pancake recipe, think again! This is sooo much better than my "perfect pancake recipe" thant I had been using for years. My mind has definately been changed! Try this recipe. You won't regret it.

I think this is a bad recipe. Perhaps I am doing something wrong, but, I doubt it. I have made this recipe twice and both times the pancakes were completely flat and rubbery, not fluffy as described. I will not use this recipe again.

I was looking for a fluffy restaurant style pancake and this hit the mark! I made a few customizations for food allergys. I used light coconut milk and apple cider vinegar, coconut oil (in place of butter) and I added a good 1tsp or so of zesting from a lemon and these turned out perfect! My new go to pancake recipe!

Amazing taste and super easy. We made bisquick pancakes last weekend .... NEVER AGAIN! My husband isn't a breakfast person but said the same thing - night and day in taste and texture. I doubled the recipe but only used one egg as someone else had and it worked great. Next time I'm going to try to cut down the butter to see how the taste is. I mixed until the flour was just incorporated then let the batter sit and bubble for a few minutes while I heated the griddle and didn't stir again. YUM YUM YUM!

Not fluffy at all, they came out flat and rubbery. I got so frustrated with the cooking time. They are so Grrrrr!!!!! I like the way they taste but unfortunately I didn't like the cooking time and consistency of them after they were cooked, I will NEVER try this recipe again.

These pancakes are lovely, you could even eat them plain. Instead of milk and white vinegar, I used sour cream, which works just as well as I had a huge tub in my fridge. I'm sure buttermilk would work fine as well. I also added a little cinammon and vanilla and the pancakes were just full of flavour and really soft and moist. I think it beats Macdonald's pancakes anytime!

wow! my husband made these for me for my birthday and i seriously never had better! i usually go for the high numbered 5 stars but i'm sure glad i let him surprise me! this made me re-think going for only "high" numbered stars. VERY filling! A double recipe makes 9 average-sized pancakes, which served 4 people with one left over (that includes 2 big eaters, a teenage boy and a very hungry dad). Followed the directions exactly, and they were wonderful. I was worried when the milk looked curdled and smelled very strongly of vinegar, but once they're cooked, you can NOT smell or taste it. The texture was light and airy and they came out so tall and fluffy - exactly what I was looking for. Next time I may add a little vanilla like I do with my other recipes, but it doesn't "need" it- these are 5-star just the way the recipe says.

Made these for breakfast this morning and they got rave reviews all around. I did have to thin the mix just a tad before making them, and I also had to cook them just under medium heat, otherwise they would get burnt on the outside and runny on the inside. Once I turned down the heat, though, they came out beautifully! The original recipe says it yields 8, but I only got 8 servings after doubling the recipe. Looking forward to freezing a batch of these for hectic school mornings.
